With bank holiday weekend looming, im gonna have some time to get a bit creative with my lunches. Would anyone like to share some tasty ideas with me. I'll eat anything, especially cheese and spicy stuff.
Seeing as I like giving as much as recieving, here is a recipe for something I can guarantee is tasty, which you may not have tried before:

Welsh Rarebit

Ingredients
25g/1oz butter
25g/1oz flour
150ml/5fl oz milk
175g/6oz cheddar cheese, grated
150ml/5fl oz brown ale
1 tsp Wholegrain mustard
2 tsp Worcestershire sauce
pepper
4 slices of toast


Method
1. Make a roux with the butter and flour, and leave to cool.
2. Bring the milk to the boil, then whisk it into the roux. Bring to the boil once again, whisking to ensure that it does not burn and also that the sauce is free of lumps.
3. Add the cheese, beat in and remove from the heat.
4. Add ale, mustard and Worcestershire sauce. Season with pepper.
5. Spoon on to the slices of toast and grill until bubbling.

Nice with bacon, eggs and a tomato.

Thinking about it im not sure you get Worcestershire sauce outside of the u.k, you'll have to improvise.

they make worcestershire sauce in the US, my dad buys it.

its some bank holiday in the u.k. I dont think it's for anything special.

Cereal

Ingredients
1 cup cereal (any brand or flavour suited to your liking)
1 cup cold milk

Method
1. Empty cereal into a bowl of at least 2 cups volume.
2. Add milk.

For particularly soft cereal, allow it to soak for a while in the milk before consuming.

Bon apetit!

I hardly ever cook with a recipe, and even then I don't generally follow that recipe, so I'm not much use for sharing. Here's one of the few that I actually have written down, even if I've never directly followed it:

Mandarin Chicken:

1 frying chicken, 2.5-3 lbs cut into serving pieces (I always use halved chicken breasts though instead)
1/4 cup flour
2 tbs Margarine
2 tbs Oil
4 tbs lemon juice
1/2 cup orange juice
2 tbs honey
1/2 tbs soy sauce
1/2 tbs powdered ginger
1 11 oz can of mandarin oranges

1.Wash and dry chicken, shake in a bag to coat with flour.
2.Heat oil and margarine in a skillet and brown pieces on each side
3. Drain oranges and set aside, mix drained juice with other liquids and ginger
4. Pour sauce over chicken, cover and simmer for 30 minutes or until tender
5. Add oranges and cook another 5-10 minutes

Serve with rice (I usually steam some broccoli with it too)

Zucchini Oven Chips

1/4 cup dry breadcrumbs
1/4 cup (1 ounce) grated fresh Parmesan cheese
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper
2 tablespoons fat-free milk
2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small)
Cooking spray

Preheat oven to 425°.
Combine first 5 ingredients in a medium bowl, stirring with a whisk. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture. Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet. Bake at 425° for 30 minutes or until browned and crisp. Serve immediately.

Yield: 4 servings (serving size: about 3/4 cup)

Watermelon salsa

1 kiwi peeled and diced fine
3 cups watermelon diced fine
1banana pepper seeded and diced
2teaspoons lime juice
2teaspoons pure vanilla extract
1/2 teaspoon garlic salt


combine in a bowl and mix well
chill and serve with tortilla chips

Also goes well over grilled fish or chicken
