I don't have an answer to the mixed metaphor, but here's my perspective on it:
1) You have taken the idea "denial about meat" and made it very cute and non-threatening without being obnoxiously political. That much is a success. Nothing kills a vegetarian's message like being unnecessarily aggressive.
2) You've anthropomorphizing carrots. Congrats! Now that you've taken the leap into a favorite hobby of my own, think about what a casual observer might read into it. What's the carrot's point of view?
3) What are you trying to say with the phrase? I think using the phrase with the image is fine, but since you're using two ideas a bit at odds, I would either come up with a third idea (perhaps a very silly diffusive one to keep up with your theme so far, like the carrots are happily committing suicide and climbing into a pot) or pick which you like more- the phrase or the carrots.
I think the images need more detail, and the font needs to be dolled up a bit, most Threadless shirts are either hyper-creatively laid out text or text-less imagery. Using both put it against a pretty high standard, and brings to mind whether its necessary to use both.
It brings to mind some weird philosophic/reality questions as well. Monkeys are used with the original saying to imply mankind regresses when it goes into denial. Is this implying carrots are in denial about meat? I'm guessing it is a simple "carrots not meat" idea you're trying to get across, but you're mixing a few metaphors.
The overall design is also a bit static for me... if you don't want to add a ton of detail, I would at least try and add some "movement" to the art.

After months of wondering what rlt stands for I am not any closer to figuring the letters out. If they don't stand for anything, I wouldn't wear it, because I know I'd have to explain that to everyone who looks at the shirt.
