That first picture is NOT of hash browns. I don't call them home fries, either, but they are definitely not hash browns.

These are hash browns.

Just went on a hash brown hunt and no place around my work has any :(

The closest thing I could find were these rosemary potatoes with onion and peppers mixed in. It's not dinner time, Dad!!

I still havent figured out the secret to making good hash browns like picture two. I *think* you have to soak them in water first to loosen them up..then throw em on a hot pan with some olive oil so they brown up nice. Still haven't tried that though. My previous attempts resulted in them being burnt and/or hard.

In the meantime, I will enjoy simplistic mini tater tots.

Picture two looks sort of like latkes, so you should try draining as much of the water out of them as possible.

shred potato onto a paper towel
let them rest for about ten minutes
heat up oil
lay in an even sheet of shredded potatoes
fry for about 5 minutes and flip
fry for another 3 minutes and you'll have some damn good shredded hash browns

Rosti are nice with baked beans. I wish we had the same beans, I have never tried 'merican beans, but I know they're not the same. I sometimes have to go to this one posh hotel for meetings and they have irish potato pancakes. Now they are nice.
