Does this look about right?

Ingredients:

* 2 cups all-purpose flour
* 1 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1 cup sugar
* 1 large egg, lightly beaten
* 1/4 cup canola oil
* 2/3 cup orange juice
* 2 tsp grated orange zest
* 2 cups fresh cranberries, chopped

Preparation:
Preheat oven to 400 degrees. Line muffin pan with paper muffin cups. In a large bowl, combine flour, baking powder, baking soda, salt and sugar. Combine with a whisk. In a small bowl, add beaten egg, oil, orange juice and zest. Stir well. Make a well in the flour mixture and add wet ingredients. Stir until just moist, being careful not to overmix. Fold in chopped cranberries. Spoon batter into prepared muffin pan. Bake for 16-18 minutes, until muffins are golden and spring back when touched.

Makes 12 muffins.

Looking at that again I'd probably use wholemeal flour and substitute grape seed oil for the canola oil.

But Muffins = awesome...don't know if muffins are superior to cupcakes...cupcakes have icing!!

Ok so at the risk of sounding like a total trainspotter the more I looked at that the less I liked it (white flour, processed sugar, crap oil etc etc).

I think I'd change the ingredients list to:

1 1/2 Cups wholemeal self raising flour
1/2 Cup unbleached plain flour
1 Cup chopped cranberries
2 Oranges, peeled, pith removed and chopped
2 Tsp grated orange rind
1/2 Cup grapeseed oil
1/2 Cup apple juice concentrate
3/4 Cup orange juice
2 eggs (or 3 egg whites)

Preparation is the same but I'd be tempted to use a cooler oven too (say 180c/356f).

ohhhhh...I like that you've added extra citrusy zing. What made the ones I liked so amazzzing was that they were really moist and had lots of orange flavored goodness.

I went on an epic quest for cranberries a few hours ago that included four grocery stores and I couldn't find 'em. I know they're out of season, but srsly, not even frozen? what a way to run a railroad.

well I couldn't even find the frozen! it was redic! but I really wanted muffins for breakfast this week, so I stared at the fresh berries for twenty minutes. then I remembered that blueberries and cranberries were very closely related. then I went insane and got some red currants and I came home and had a drink and threw some oatmeal in the immersion blender and broke a glass and decided what this recipe really needed was a little brown sugar.

they'll be done in about 10 minutes. I'm scared to open the oven.

1 1/2 Cups unbleached white self raising flour
1/2 cup wholemeal plain flour
1/2 cup finely chopped macadamia nuts
400g blueberries
1/2 cup grapeseed oil
1/2 cup apple juice concentrate
3/4 cup low fat milk (soy in my case)
2 eggs (or three egg whites)
6 halved macadamia nuts

180c oven
1) sift the flours and combine with dry ingredients (except the halved nuts)
2) combine all the wet ingredients
3) mix wet ingredients into dry ones
4) spoon into muffin trays
5) top with halved nuts
4) cook for 20 - 25 mins.

Lemon Poppy Seed muffins give me hope for a brighter future whenever I eat them. But I'll partake in any muffin, really.

I think I had some kind of banana bread muffin hybrid tonight. It was tasty.

I waffled a bit, but initially I decided to make the original recipe to establish what the first cook was trying to get at. I ventured to try (fresh, not dried) red currants in the absence of cranberries, and then I got to drinking thinking, and I was like "DAMMIT I WANT WHOLE GRAINS IN THIS" so I substituted 1/2 c of the all-purpose flour for 1/2 c of oatmeal that I pulverized with the immersion blender. then I was thought "OH YEAH, MONICA LIKES HOW THEY'RE MOIST AND BROWN SUGAR KEEPS BAKED GOODS MOISTIER" so I did half white sugar & half light brown sugar. I baked them at 350F, approx 9 min/rotate pan/9 min (until they sprung back when touched).

they're OK: neither gross nor amazing. room for improvement. they taste like something I was changing my mind about mid-process, if that makes any sense.

the currants are strong! not in a bad way, but I wonder if it requires more orange flavor or less currants. I used maybe like 11 oz of them. I like how they are all juicy and how they sort of pop when you bite them.
