I wanted to start a blog to write down my favorite recipes, and hear others.

See, I was never taught to cook, and I pretty much had my meals made for me unless it was a bowl of cereal or pb sandwich. So, I've been trying it out- some stuff I'm good at, others are a complete disaster.

Hopefully I'll have at least one or two recipes a week down on here, hope you share your own!

two pieces of bread. butter one side on each. place butter-side down on a flat-press or pan. cook on medium heat until golden brown, add several slices of cheddar, between the two pieces and continue to cook until melted.

11/22 French Onion Soup



Ingredients:
2 cans of beef broth
1 white onion
1/4th cup of butter
1 tablespoon of olive oil
2 cloves of garlic
1/4th teaspoon of thyme
1/4th cup of shredded gouda cheese
1 slice of provolone cheese
2 cups of french bread.
Salt and pepper to taste

Directions:
1)Melt butter with olive oil in deep saute pan. Add in onions and cook until brown.
2)Add in the beef broth, garlic, thyme, salt and pepper. Simmer for 30 minutes.
3)While broth is simmering cut up french bread into cubes and bake at 325 until bread is nice and brown.
4) Take out the bread and put the oven on Broil.
5) Ladle soup into oven safe bowls, place the bread on top and sprinkle the gouda on top and place a slice of provolone on top.
6) Put the bowls on a cookie sheet and cook in the broiler until the cheese has bubbled and browned.

Sweet Corn Casserole

1 can corn, drained
1 can creamed corn
1 box Jiffy corn muffin mix (the smallish ones that are like $.50)
1/2 stick of margarine or butter
1 cup sour cream (light works just as well)

mix all ingredients and put into a 2.5-quart casserole (a 9x13 pan will spread it too thin unless you're doing a double batch). Place in pre-heated 350-degree oven for 1 hour.

Serves 6-8.



Odd Tamale Pie

make Sweet Corn Casserole as noted above, but set aside prior to cooking.

2 lbs ground beef, shredded chicken, or whatever kind of meat you want to try; brown and drain and season however you season taco meat.
2 cups shredded taco cheese

Place cooked, seasoned meat into bottom of 9x13 pan. Sprinkle cheese over meat evenly. [If desired, add taco ingredients like beans, refried beans, etc and place evenly onto meat & cheese]Spoon corn casserole over top and spread evenly. Bake in pre-heated 350-degree oven for 1 hour. Check corn mixture for doneness prior to serving.

Serve over lettuce, tomatoes, or other taco-type ingredients. Great with salsa or queso, too. Eat with tortilla chips!

Serves 6-8 people as a meal, up to 12 as a side dish.

By the way, the Odd Tamale Pie reheats very well. I make it frequently and take portions to work with me (though I have to leave out the beans because of my girls). :)

What are you doing? Do NOT put peanut butter on that. No! Peanut butter outside, chocolate inside, butter inside, cheese outside! That's how you make a Grilled Charlie!

and hopefully you know a clove is a little thing off the bulb and not the entire bulb of garlic... because i have made that mistake and trust me you do not want to make that mistake.

oh yeah, cut up the clove before you toss it in the pot, hahaha

Breakfast Casserole

8 large eggs
8 pieces of bread, processed into crumbs (6 slices if you cut into cubes)
1 pound breakfast meat, cooked & chopped small (I run sausage through the processor)
salt and pepper to taste
2 cups shredded mild cheddar cheese
2 cups milk

stir all ingredients and place into greased 9x13 pan (glass or metal work best), cover with foil and place in refrigerator for 8 hours or overnight. Cook in pre-heated 350-degree oven for 45 minutes, take out and lightly "shake" the pan to see if the eggs are done (they'll look too wiggly or watery if they're not done).

Serves 4-6. Cubed bread makes the casserole fluffier and more airy; processing the bread makes a denser casserole more like quiche.

Fronch Toast!

Batter:
2 eggs
1 tbsp sugar
1 tbsp vanilla extract
Pinch of salt
Dash of vanilla soy milk (I'm sorta lactose intolerant, but normal milk is fine.)

Break the eggs into a shallow bowl. Add in the sugar, vanilla extract, salt, and milk. Mix/whisk until well-incorporated but don't get crazy with it. Too much air is no bueno.

2 large pieces of French bread (cut in half)
or
4 not-so-large pieces of French bread
1 tbsp of butter
Honey
Jam

Get the pan to medium heat. Coat the pan with the 1 tbsp of butter, which is a pretty arbitrary amount. You could probably use less if you wanted; that's just how much I use.

Dip the bread (and yes, it must be French bread) into the batter, coating both sides pretty liberally. Let any excess drip off and then place the battered bread onto the pan. Heat each side about 3-5 minutes or until golden brown. If you have some extra batter left over after the 4th piece of bread, you could try to make another piece of French toast but it might be more toast than French toast.

Serve with the honey and jam.

Forgot to add on breakfast casserole that if you're not weird about veggies like my kids can be, you can totes throw in chopped peppers and onions or mushrooms or whatever you like!

See, a reason I'm hestitant on posting recipes is because I generally use the rule in cooking called "winging it."

So I dont think I could actually tell you how much of anything to use ever.

But good grilled cheese is easy, it takes the right amount of butter, and then adding garlic salt and italian seasoning to the bread before you put it on the pan makes it taste deliciousousous.

Real recipes to follow.

I'm the same way. The ones I've posted are just ones I've memorized because people ask about them so often. I don't think I could even begin to recount my chili recipe in proper increments!!! :)

I have a 20 lb bag of basamati rice, so most of my meals are like, BBQ chicken, with rice!

i can teach you to make sorbet. it's really easy, but it takes about 6 hours or so to make 'cause you have to keep stirring it every half hour.

A little story about my mom:

When she and my dad first got married, mom's first big try at something was tuna noodle casserole. She slaved in the kitchen, making sure she read the recipe and got all the ingredients right. Then she and my dad sat down to the meal. In anticipation, my mom watched my dad take his first bite. Then she heard the crunching.

She forgot to COOK the noodles.

Well, I have a ton of Marinara to use up (I tend to buy things in bulk for my apartment if you havent noticed) but I tend to add in basil and garlic and whatnot to make it better.

Yeah...college cooking is pretty much winging it and putting whatever you want into the food.

Like, for the French toast, you could probably change any element of that "recipe" and still come out with a good, if not better, end result.

The key to good grilled cheese is to cook the pieces of bread seperately, and only add the cheese at the last minute, that way you have the perfect combination of crisp-ness and melted.

Alot of people assemble the sandwich and then cook it one side at a time.. this is not as good.

Frito Chile Pie, an Oklahoma delight

- A bag of Original Fritos
- Cheddar Cheese
- French's Mustard
- Trader Joes Vegetarian Chile or whatever canned chile you want

- Heat up the chile in a pot
- Put a good handful of Fritos in a bowl
- Shred some cheddar cheese on top on the Fritos
- Place a healthy portion of hot chile on top of the cheese & Fritos
- Squeeze some mustard on top of everything
- Stir it up a little or a lot and EAT!

So good on a winter night or after a long surf.

One Sexy Night
Take one Chris, partially undressed.
Mix with a few glasses of wine.
Let the Chris sit on the couch, while you sit next to him and gently touch his knee every now and then, especially when laughing at his jokes.
Consume several glasses of wine yourself while you're at it.
Add some chocolate.
Let simmer on couch for thirty to forty minutes.
Begin to make out.
The Chris will start to shed the rest of his clothes.
At this point, he will begin to try to remove your clothes as well. To speed things up, you might as well help.
Remove the concoction to the bedroom.
Use condom--ribbed for your pleasure adds some extra spiciness!
Season with music to taste.
In an hour, garnish with a cigarette or post coital cocktail.

Zucchini Oven Chips

1/4 cup dry breadcrumbs
1/4 cup (1 ounce) grated fresh Parmesan cheese
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper
2 tablespoons fat-free milk
2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small)
Cooking spray

Preheat oven to 425°.
Combine first 5 ingredients in a medium bowl, stirring with a whisk. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture. Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet. Bake at 425° for 30 minutes or until browned and crisp. Serve immediately.

Yield: 4 servings (serving size: about 3/4 cup)

I've heard a shorter recipe of that one, Chris.

Prep time: 2 seconds after you say Hi

Cooking time: 3 minutes, until the Chris is well-done.

Comments: Wouldn't recommend if you are looking for something filling, this recipe will leave you unsatisfied and longing for bigger meal.
