I want to buy an imac...
a used one. How far back(model-wise) can I go before they start to become really dated? I'm looking on ebay or whatnot. Anyone a mac expert here? How about processor speed? What's fast enough to run most design apps?

Don't go further back than a first generation G5 iMac. Esp if you want to run CS4. The AM is just enough to manage the software.

I"m not sure, probably if it's silver than you're OK. If it's white, I'm not sure. I mean, my mother has a white one that's probably three or four years old that's still doing awesome.
