Inspired by PolyesterJones' curry recipe in the curry blog, I've decided to start a recipe blog.

Post your recipes here - it doesn't have to be your favourite necessarily, ie. it could be one you make often because it's easy and pretty tasty.

Anyway, here goes:

Pesto and Haloumi Pasta
-----------------------------------
-Block of Haloumi cheese
-Small jar (about 120ml or so) of Basil pesto
-Any pasta you want, but spirals work well
-Extra light sour cream
-Snow peas, chopped (if you want)
-Sprouts

1. Cook the pasta and put it aside.
2. Slice the haloumi as thick or as thin as you want, I find 2 to 3 mm thick works pretty well.
4. Coat the haloumi slices with oil and sprinkle some dried oregano
5. Heat a frying pan on the stove with a little oil
6. Fry the haloumi slices for about 30 secs to a minute each side
7. Add the pasta, snow peas and sprouts to the pan and mix well.
8. Add about half the jar of pesto (more if you want) and a couple of spoons of sour cream, and continue to mix until heated.
9. Serve :)

I have here the recipe for the best freaking cookies in the world:

Full recipe here

They are chocolate cookies with dark chocolate chips, and they are just the slightest bit salty, and I love them.

I don't think we have any sugar, or I'd go make some right now. I bought dark chocolate just for this purpose a couple days ago.

Dr Manhattan is anatomically correct
jenraskopf

Hmm... most of my good recipes are carefully guarded family secrets. Or very very not exact:

Cut up about 3-5 nice tomatoes into wedges.

Cut up into 1/2 slices 1/2 to 1 vidalia onion (depending on how much you like onions)

put them in a bowl.

throw on some olive oil and balsamic vinegar.

season to taste using salt, freshly ground pepper, oregano, dill, "italian seasonings", basil, whatever.

And you have a delicious tomato salad. It's a pot luck hit.
Dr_Manhattan
Dr_Manhattan on Jul 09 '07 at 8:10pm
Sounds good. I don't know what vidalia onions are, but thus is the magic of teh internets.

And that's about how I got the recipe from my mom... except she didn't say which spices to use.

Like chicken wing dip?

2 chicken breasts

8 oz of Frank's Hot Sauce

2 celery stalks

16 oz cream cheese

shredded Cheddar Cheese

Boil chicken breasts and set them aside to cool.

Cut up celery.

Put cream cheese, a handful of cheddar, celery, and the hot sauce into a bowl. Microwave until cream cheese is melted (but stir often!)

Cube chicken, add to cream cheese and stir in. Microwave for one minute.

Pour into oven safe dish and sprinkle cheddar cheese on top.

Pop in the oven at 350 for 15-20 minutes.

Eat with crackers, tostitos, chips, whatever.

cassiepaige
cassiepaige on Jul 09 '07 at 8:22pm
Oh.

You don't have to put the celery in.

Sometimes I add dried onion to it.

You can adjust the hot sauce according to your personal taste.

Add rum.

Stir lightly and enjoy.

If you brush a steak with oil, and season it with salt and pepper and maybe some minced onion or garlic, the best thing is to throw it on the bbq, but you can also do a nice broil or pan fry.

Peanut Butter Cookies

½ cup sugar

1 egg

1 cup peanut butter

Mix together very well and refrigerate for 30 minutes. Roll into balls, put on a cookie tray about an inch apart. Flatten and bake for 20 minutes at 325°F. I usually double the recipe.

jenraskopf
jenraskopf on Jul 09 '07 at 9:10pm
I would recommend for a little fancier steak, making a red wine vinagrette to brush on it, then simmering the remaining vinagrette and adding corn starch to make a glaze.

cassiepaige
cassiepaige on Jul 09 '07 at 9:44pm
iPear, make sure you marinate your steak in something, and don't flip it a lot. Leave it sit for 5 minutes before cutting.
cassiepaige
cassiepaige on Jul 09 '07 at 9:55pm
I usually cook my steaks on medium (on my grill) and keep my steak on for about 5 minutes longer than everyone elses.

Red in the middle = death.

Hot dogs are the only food I grill and move around a lot. That's just so they don't get those weird blister things all over them. Ew.
cassiepaige
cassiepaige on Jul 09 '07 at 10:07pm
You enjoy that death.

What about heart attacks on a stick? Those are delicious and deadly.

Ingredients:

Mini Hotdogs (You know, the ones in the vacuum sealed pouches?)

Bacon (about a pound)

Brown Sugar

Cut bacon in half.

Wrap each slice of bacon around a mini hotdog.

Put all hotdogs in a cake pan.

Sprinkle brown sugar over all hotdogs.

Bake at 350 until bacon is crispy and caramelized. (20ish minutes?)

Stick a toothpick into each hotdog.

Yum. Death.

brownstar

Excellent, some of these are great, some are...not so great. The urine steak is an interesting concept though, KB.

The steak marinade I tend to use is:

Soy sauce

Honey

Beer

Minced garlic

Tomato sauce (not sure what it's called in the US, ketchup maybe?)

Mix all the above in a bowl, add steaks and stick in the fridge to marinate for a while, maybe an hour or even overnight, then chuck on the barbie and cook about 3-5 minutes each side on a high heat.

cassiepaige
cassiepaige on Jul 09 '07 at 10:59pm
That sounds like a good marinade.

Jack Daniels BBQ sauce is my favorite chicken marinade. I wonder what that would be like on a steak?

Salsa chicken

Ingredients

- boneless, skinless chicken breast halves

- taco seasoning mix

- salsa

- Cheddar or taco cheese

Cover the chicken breasts with the taco seasoning. Put the chicken in a baking dish; pour in enough salsa to cover the chicken. Bake at 375°F for thirty minutes. Sprinkle cheese on top; bake three to five more minutes.
lookpolish
lookpolish on Jul 09 '07 at 11:01pm
D'oh.

That's supposed to be 375°F.
iPear
iPear on Jul 09 '07 at 11:01pm
I always marinate my steak, but the marinade is usually the same mixture of Vinegar, a little garlic, some lemon juice, and salt and pepper. I just wanted to know.

also, what do you usually cook your meatz on? A charcoal grill/propane grill/broiler/etc. etc.

?
brownstar
brownstar on Jul 09 '07 at 11:07pm
man, why is it that everytime i try to cook chicken in anything but my george foreman grill, oil splatters everywhere and it gets so messy?
cassiepaige
cassiepaige on Jul 09 '07 at 11:07pm
I could be wrong, but it's probably your marinade that is drying your steak out. Perhaps make that as a dipping sauce and just do a steak rub of some sort?

I use a propane grill.

Mango salsa is really good to bake chicken in.
cassiepaige
cassiepaige on Jul 09 '07 at 11:08pm
If you are frying the chicken brownstar, turn the heat down. It'll keep it from getting everywhere.
